Prometeo, an Italian SME located in Urbino, specialized in the organic production of two old wheat varieties emmer and einkorn will be involved. The company manages a food chain involving about 200 farmers and it is engaged in following all of them during every phase of cultivation: from sowing to harvest. The business idea is based on the assumptions of: 1) recovering and preserving the biodiversity of local varieties; 2) exploitation of the adaptability of selected varieties to marginal areas of cultivation; 3) development and valorisation of high nutritive values products; 4) innovation of the transformation processes on einkorn-based product in the market; 5) a vertically integrated and sustainable production chain. Agricultural production is regulated by contracts of cultivation with a fixed price of the harvested product established at the sowing. During the pilot will be characterized the nutritional, microbiological and chemical properties of two selected flour (whole and semi whole) in two different storage periods (beginning and end of the seed storage) to assess their quality. The same characteristics will be tested in a selected einkorn end product as ingredient of a RTE meal. Pilot results will be used for the formulation of a new RTE meal, together with Emilyeatsrl.
View pilot cardThe Greek Association of Medicinal and Aromatic Plants (MAPs) will be involved. The Association represents 50 Greek SMEs and farmers in the field of MAPs. The pilot will work in close collaboration with the farmers and the main stakeholders of the Greek Mountain Tea (Sideritisspp) in order to assess the genetic profile of the cultivated plants, the nutritional and bioactive content of the raw material and at least two final products. Moreover, a mapping of the SMEs and the Value Chain different Business Models as well as, the application of digital tools to enhance the visibility and trust to consumers of the products will be performed.
View pilot cardSalamousas, a Greek SME located on the island of Lemnos, specialized in the organic production of local varieties of legumes and cereals will be included. The company manages a food chain involving about 30 farmers and follows a very similar business model as in Pilot 1 but applied in a different geographic and climatic area, the Aegean Islands. During the pilot will be characterized the genetic profile, nutritional, and chemical properties of one local wheat variety as well as the its flour characteristics to assess their quality. The same characteristics will be tested in a selected wheat end product as ingredient of a local traditional pasta like product. Moreover, digital tools will be tested to improve the fairness of price distributing among the VCs as well as to give added value to the final product.
View pilot cardThe pilot will involve CAB Amor Benamor, an Algerian leader both in production capacity (reception of 11,000 tonnes/day) and in market share (60%) in canned tomatoes, harissa and jams, products widely adopted by Algerian consumers. The pilot will involve selected producers and canneries groups to investigate their performances. Moreover, the perception and efficiency of their contractual choice will be validated on the GourMed project formulated in collaboration to the Consortium. The industrial tomatoes growers and canneries information and their feedback will be supported by data collection tools and multiple surveys in order to analyze the efficiency and fairness of their contractual choices. The assessment of the involvement of public authority in the underlying vertical coordination mechanism will be highly stressed. As a final result of the pilot, new promising formulations will be suggested to the company and recommendations will be provided in order to refine their knowledge of producers’ feedback, predict their willingness and consequently improve their performances. Moreover, recommendations to increase the efficiency of the entire value chain will be promoted to the authorities to be included in public regulations.
View pilot cardThe pilot will involve CAB Amor Benamor, an Algerian leader The pilot will be supported by BioVall, a Tunisian SME specialized on the processing of prickly pear and carob traditional products. Tunisia is one of the countries with the largest areas of prickly pears in the world. This sector contributes to the social development of several regions of Tunisia due to rural women work. Prickly pear requires a hot climate and a very sunny exposure, conditions that not only Tunisia, but also other Med countries fulfil or will fulfil due to climate changes. The objective of this pilot is the innovation of local food industries to give added-value to the products and enhance market share by 1) characterizing the nutritional value of red cacti, a neglected variety although very spread in Tunisia; 2) defining a sustainable exploitation plan of these species;3) proposing a new processing methods for traditional carob and prickly pear products in the market for better nutritional quality and preservation and 4) offering newly formulated products based on red Prickly pear and characterizing its nutritional value.
